Two quick Olympic suppers

Some of my favourite meals are the simplest, quickest affairs. Especially when there is all this fantastic Olympic TV to catch up on… Fast food can be fantastically healthy when you can snatch it straight from the garden.

Here’s a couple from the last week…

More Prawn than Brains stir fry

Red swiss chard (leaf and stalks), cavolo nero kale, both finely chopped. Stir-fried with chopped garlic and chilli, a handful of prawns, and a teaspoon of cashew butter stirred in at the end.

Allez! Allez! Oeufs

Romanesco courgettes, fried in olive oil with tomato paste stirred in half way through. Once nicely brown on both sides, arrange round the edge of the frying pan and crack a couple of eggs into the middle. Tip the pan from side to side until the whites have dispersed and cook until the eggs are to your liking (add a saucepan lid if you want them cooked on top). Sprinkle with salt, pepper, and a little sumac if you have it, and slide out onto a plate.
